This pancake-like gujarati snack is grilled between banana leaves which lend it an aroma all of its own.

Ingredients

2 cups rice flour (chawal ka atta)
1/2 tsp baking powder
3 tbsp low fat curds (dahi)
1/2 tsp cumin seeds (jeera) , coarsely ground
1 green chilli , finely chopped
1 carrot , grated
3 tsp finely chopped fresh green garlic (hara lehsun) or 1 (optional)
2 tsp oil
salt to taste
banana leaves (kele ka patta) for cooking

For Serving

Method
  1. Mix the rice flour, baking powder, yoghurt and 2 teacups of water. Leave the mixture for 2 to 3 hours.
  2. Add the cumin seeds, green chilli and salt and mix very well.
  3. Cut the banana leaves into small squares.
  4. Apply a little oil to the banana leaves. Spread a lillte mixture on each leaf portion and top with carrot and fresh garlic. Put another greased leaf on top.
  5. Cook on a tawa (griddle) until light brown spots appear on top. Repeat for the other side. Serve hot with green chutney.
