Mexico's famous 'refried beans' aren't really refried at all.

Ingredients

2 cups red rajma (kidney beans) , soaked
2 large tomatoes , chopped
1 clove of garlic (lehsun) , crushed
2 to 3 green chillies , finely chopped
2 large onions , chopped
1 tsp chilli powder
1 tsp roasted cumin seeds (jeera) powder
2 tsp sugar
2 tbsp butter
2 tbsp oil
salt to taste

Method
  1. Wash the beans and soak in water ovenight. Next day, drain.
  2. Add the tomatoes, garlic, green chillies, half the onions and salt and put to cook in a pressure cooker for 5 whistles. Drain and keep aside the drained water.
  3. Heat the oil and fry the remaining onions for 1/2 minute.
  4. Add the beans, chilli powder, cumin seed powder, sugar, butter and salt and cook for 2 to 3 minutes.
  5. Mash the beans coarsely.
  6. If the mixture is dry, add the drained water.
  7. Serve hot.

Mexican Re-fried beans are tasty and a great source of protein. They are good to eat on their own or stuff them into your tortillas. I would drop the butter and make them a lot more healthier.
