Red and green salad with peanut dressing, a horde of ingredients make this salad a nutrient rich munch. Rich in vitamin a, c, iron and zinc, all required for healthy skin and hair growth. The peanut dressing is a must try! chose veggies of your choice to suit your palate.

Preparation Time:     Makes 6 servings

1/2 cup red capscium cubes
1/2 cup yellow capsicum cubes
1/4 cup roughly chopped celery (ajmoda)
1/2 cup thinly sliced spring onion (whites and greens)
1 cup cucumber cubes
1 cup tomato cubes
1/2 cup thinly sliced carrots

To Be Mixed Into A Peanut Dressing
5 tbsp coarsely crushed peanuts
1/4 cup finely chopped coriander (dhania)
1/2 tsp garlic (lehsun) paste
2 tbsp lemon juice
1 1/2 tbsp sesame seeds (til)
salt to taste

  1. Combine all the ingredients in a deep bowl, mix well and refrigerate for at least 1 hour.
  2. Just before serving, add the prepared peanut dressing and toss well.
  3. Serve immediately.

A colourful salad with bountiful of antioxidants from the veggies used. I loved the crunchiness and the contrast flavours the dressing lends to this salad. its quite filling so can be had as a snack too.
