A sinful cake recipe, especially created for all cake lovers, Red velvet cake is simply irrestible.A delicious mix of shortening with flour, eggs, castor sugar and baking soda. Top the red colored velvet cake with vanilla frosting and your Christmas special cake is ready to be served as dessert or with tea.

Ingredients


1 cup margarine
2 eggs
1 1/2 cups sugar
1 tsp cocoa powder
2 oz. red colour
2 1/2 cups cake flour
1 tsp salt
1 cup buttermilk
1 tsp vanilla essence
1 tsp baking soda
1 tsp vinegar

White frosting, recipe follows
2 tbsp whole wheat flour (gehun ka atta)
1 cup milk
1 cup unsalted butter
1 cup icing sugar
1 tsp vanilla extract

Method

  1. In the bowl of a mixer, cream together the shortening, eggs and sugar.
  2. In a separate small bowl, mix together the cocoa and food coloring.
  3. Add the paste to the shortening mixture.
  4. Sift the flour and salt together over parchment.
  5. Add to the batter alternately with the buttermilk in 3 additions.
  6. Add the vanilla extract. fold in the baking soda and vinegar.
  7. Pour the batter into 2 greased 9-inch cake pans.
  8. Bake for 30 minutes or until an inserted cake tester comes out clean.
  9. Let cool on a cooling rack. invert the cakes from the pans.

Frosting:

  1. Over medium heat, cook the flour and milk until thickened. let cool.
  2. In the bowl of an electric mixer, cream together the butter, sugar and vanilla until light and fluffy.
  3. Beat in the flour mixture.
  4. Frost the top of the first layer with frosting and set the second layer on top.
  5. Frost the entire cake with remaining frosting.

Its a typical cake recipe mostly, and yet the minor details, change so much in the end result! My family loved the frosting! The cake turned out extremely smooth and spongy too! I'm definitely re-making it especially for Christmas! :D
