Good Food for Diabetes





MIXED SPROUTS SALAD


Maintain your blood sugar levels with this interesting combination of subtly spiced sprouts and vegetables.

Preparation Time : 10 mins.
Cooking Time : 2 mins.

Serves 4.

Ingredients
¾ cup boiled mixed sprouts (kabuli chana, moong, rajma, matki, etc.)
¼ cup grated radish (mooli)
¼ cup chopped tomatoes
¼ cup chopped small fenugreek (methi) leaves
2 tablespoons chopped coriander
Salt to taste
For the tempering
1 green chilli, slit
A pinch of asafoetida (hing)
1 teaspoon oil
Method
1.

Combine all the salad ingredients together in a bowl and keep aside.

2.

Heat oil in a non-stick pan and add the green chillies and asafoetida.

3.

Add all the other ingredients and toss well. Serve immediately.
