Raspberry filled almond cookies are a cookie recipe prepared with almond powder. The red raspberry puree is filled in the almond cookies and the ends are pinched together. Ingredients


3/4 cup plain flour (maida)
1/2 tsp baking powder
1/4 cup butter or margarine
1 tbsp + 2 tsp. sugar
1/2 tsp almond essence
1/2 tsp vanilla extract
1 tbsp + 1 tsp. red raspberry puree

Method

  1. Preheat oven to temperature 350°f.
  2. Combine flour and baking powder in a bowl.
  3. Add in butter and remaining ingredients, except puree. form dough into a ball. pinch small pieces of dough and roll into balls.
  4. Place balls between 2 sheets of wax paper.
  5. Using a rolling pin, roll each into a circle, 1/8 inch thick.
  6. Remove top sheet of wax paper.
  7. Dot the center of each circle with 1/4 tsp. puree.
  8. Fold cookie in half and pinch ends together.
  9. Remove cookies from bottom piece of wax paper and place on a lightly oiled cookie sheet.
  10. Bake 12 minutes or until bottoms are lightly browned.
