Ingredients


For the dough
1 cup plain flour (maida)
1 cup whole wheat flour (gehun ka atta)
3/4 cup chopped spinach (palak)
1/2 tsp lemon juice
1 tsp salt
2 tbsp ghee

For the stuffing
1 1/2 cups grated radish (mooli)
2 tbsp chopped corriander (dhania)
2 green chillies, chopped
salt

Other ingredients
ghee for cooking

Method

    For the dough

    1. Blend the spinach and lemon juice with 2 tablespoons of water in a liquidiser.
    2. Sieve the flours with the salt. Add the ghee and mix well.
    3. Add the spinach mixture. Make a semi-soft dough by adding enough water.

    For the stuffing

    1. Sprinkle a little salt over the radish. Keep aside for 1/2 hour and squeeze out the water.
    2. Add the coriander, green chillies and salt.

    How to proceed

    1. Roll out thin rotis. Cook them lightly on a tava and keep aside.
    2. When you want to serve, take one roti, spread some mixture and turn the other side over it so that it becomes a half moon.
    3. Cook on a tava on both sides with a little ghee.
    4. Serve hot with fresh curds.
