Rabdi,a thick creamy milk based sweet which can be served by itself or used as topping with kulfi, malpuas, pancakes etc. . . Though this sweet takes a while to cook, it is worth the efforts!

Ingredients


For The Rabdi
2 1/2 cups full fat milk
1/4 cup sugar

Method
For the rabdi

  1. Heat the milk in a broad non-stick pan on a medium flame for approx. 15 to 20 minutes or till the milk reduces to 1/3 of its quantity, while stirring and scrapping the sides of the pan continuously.
  2. Add the sugar and simmer on a medium flame for approx. 20 minutes or till the milk becomes thick.
  3. Remove from the flame and use as required.

Tips
  1. Use a non-stick pan it prevents the milk from sticking and burning.
