Quick Vegetable Soup recipe - How to make Quick Vegetable Soup

Preparation Time:    Cooking Time:    Total Time:     Makes 4 servings

1/2 cup thinly sliced onions
1/2 cup thinly sliced potatoes
1/2 cup thinly sliced tomatoes
1/4 cup thinly sliced carrots
1/4 cup peeled and thinly sliced bottle gourd (doodhi / lauki)
1 tbsp finely chopped celery (ajmoda) , optional
1 tsp butter
4 black peppercorns (kalimirch)
salt to taste

For The Garnish
2 tbsp finely chopped coriander (dhania)
  1. Combine all the ingredients along with 3½ cups of water in pressure cooker, mix well and pressure cook for 1 whistle.
  2. Allow the steam to escape before opening the lid.
  3. Serve hot garnished with coriander.

As the name says, this soup is really quick.. It is very simple in taste. The peppercorns gives a very light and nice flavour..

Hot clear soup with tomatoes, carrot and doodhi and garnished with crumbled paneer and coriander. A quick and healthy clear vegetable soup which my 5 and 9 year daughters loved.
