Quick vegetable soup, the colourful appearance of this easy-to-prepare soup will entice the diner to finish it off instantly! this soup is a powerhouse of b-complex vitamins and minerals, which help in the metabolism of protein, fats and carbohydrates. I’ve used only ¼ tsp of low-fat butter to prepare this broth, which makes this nutritious soup also ideal for health conscious people.

Ingredients

1/2 cup thinly sliced onions
1/2 cup thinly sliced potatoes
1/2 cup thinly sliced tomatoes
1/4 cup thinly sliced carrots
1/4 cup peeled and thinly sliced bottle gourd (doodhi / lauki)
2 stalks celery (ajmoda) , finely chopped(optional)
1/4 tsp low-fat butter
4 whole peppercorns (kalimirch)
salt to taste

For The Garnish
1/2 tsp chopped dill leaves
2 tbsp chopped coriander (dhania)
3 tbsp grated low-fat paneer

Method
  1. Combine all the ingredients together, add 3½ cups of water, mix well and pressure cook for 1 whistle.
  2. Allow the steam to escape before opening the lid.
  3. Discard the peppercorns and serve hot garnished with dill, coriander and paneer.

Hot clear soup with tomatoes, carrot and doodhi and garnished with crumbled paneer and coriander. A quick and healthy clear vegetable soup which my 5 and 9 year daughters loved.
