Milk is thickened with fresh bread crumbs to give you an instant rabdi. This is not the original recipes but one that’s used to make a really creamy rabdi in a jiffy.

Ingredients

3 cups full fat milk
2 bread slices
1/2 cup condensed milk
2 tbsp sugar (optional)
1/4 tsp cardamom (elaichi) powder
a few saffron (kesar) strands strands

Method
  1. Remove the crusts of the bread slices and discard. Grind the bread slices in a food processor to make fresh bread crumbs. Keep aside.
  2. Bring the milk to a boil in a heavy bottomed pan. Add the fresh bread crumbs, condensed milk and sugar and cook on a medium flame, while stirring continuously (approx 10 minutes).
  3. Dissolve the saffron in 1 tbsp warm water and keep aside.
  4. Remove from the flame, add the cardamom powder and saffron and mix well.
  5. Refrigerate for 2 to 3 hours and serve chilled.
