Quick Pineapple Souffle

A delicious eggless souffle, which can be made in a jiffy.

Ingredients


1 small can (450 grams) pineapple slices
1 packet (100 grams) pineapple jelly
500 ml vanilla ice-cream
1 packet (11 grams) strong gelatine
1 tbsp lemon juice

For decoration
1/3 cup sweetened fresh cream
glace cherries

Method
  1. Melt the jelly in 3 teacups of boiling water. Cool and put to set partially.
  2. Chop the pineapple into very small pieces, leaving aside a few pineapple pieces for decoration. Keep aside the syrup.
  3. Take out 1/2 teacup of the pineapple syrup, add the gelatine, mix well and heat on a slow flame till the gelatine dissolves.
  4. Beat up the partially set jelly thoroughly and add the gelatine to the jelly.
  5. Break up the ice-cream thoroughly and mix the ice-cream, jelly, lemon juice and pineapple pieces very well.
  6. Pour into flat dish and put to set in the freezer compartment of a refrigerator.
  7. When set, decorate with the sweetened cream, cherries and pineapple pieces.
  8. Serve cold.
