This wholesome soup requires the mushrooms and onions to be cooked with milk, for a pleasing colour, flavour and texture. With a tempting garnish of grated cheese, indeed the quick mushroom soup is worth the 10 minutes spent! however, if you do not like mushroom, you can make the same recipe with spinach instead.

1/2 cup chopped mushrooms (khumbh)
1 tbsp chopped onions
1 tsp plain flour (maida)
3/4 cup milk
1 tbsp butter
salt and to taste

For The Garnish
2 tbsp grated processed cheese

  1. Put 1 cup of water with the milk to boil in a pan.
  2. In another pan, heat the butter and saute the onion for a few seconds. Then add the mushrooms and saute.
  3. Add the flour and saute for a few more seconds.
  4. Add the milk and water mixture gradually, stirring constantly so that no lumps from.
  5. Allow the soup to come to a boil. Add salt and pepper.
  6. Serve hot, topped with the grated cheese.

  1. Variation : Creamy Spinach Soup :
  2. If you do not like mushrooms, use 1 cup of chopped spinach instead.
