Quick fix chocolate fudge, you cant think of an easier way of making fudge! pressure cooking makes it so hassle free that fudge will no longer remain a rare treat… you can whip it up whenever your kids dream of it!

Ingredients

1 1/4 cups chopped dark chocolate
1/2 cup milk
1 1/4 cups fresh bread crumbs , refer handy tip
2 tbsp softened butter creamed with 1 tbsp powdered sugar
1/2 cup condensed milk
1/2 tsp vanilla essence
1/3 cup chopped walnuts (akhrot)

Method
  1. Combine the dark chocolate and milk in a bowl and cook in a double boiler till it melts, while stirring gently or microwave for a minute. Ensure that no lumps remain.
  2. Add the condensed milk, vanilla essence, walnuts, bread crumbs and butter_sugar mixture, mix well and pour into a greased mould of you choice or a greased aluminum tin.
  3. Place a small stand in a pressure cooker, add enough water and place a sieve or perforated plate over it.
  4. Place the mould/ tin on the sieve and pressure cook on a high flame for 2 whistles.
  5. Allow the steam to escape using quick release method, (refer handy tip ) before opening the lid.

Handy tip:

  1. To make 1¼ cups of fresh bread crumbs, blend 7 to 8 small bread slices in a mixer till crumbly. Use as required or store in an air-tight container in the refrigerator for 10 to 15 days.
  2. Quick release method: also called the cold water release method, as it is used to release pressure quickly. To use this method, remove pressure cooker from the burner, place in the sink and run cold water gently over the lid until the steam dissipates.
  3. When putting the pressure cooker in the sink, tilt the handle up so that the water flows away from you. Quick release works best for foods where you need to control the timing and degree of cooking like soups or rice preparations.
