Chilli oil is a spicy oriental condiment prepared by infusing oil with red chillies. It has a really pungent aroma and fiery taste. You can see the full-blown effect of chilli oil in this Quick Chilli Garlic Noodles, which features minimal ingredients and a simple procedure, yet producing a totally stunning effect!

Serve along with a bowl of Vegetable Chow-Chow or 5 Treasure Vegetables .

Preparation Time:    Cooking Time:     Makes 2 servings

1 tbsp chilli oil
1/4 cup schezuan sauce
1 1/2 tsp finely chopped garlic (lehsun)
2 cups boiled noodles
salt to taste
1 tbsp oil
1/4 cup finely chopped spring onions whites and greens

For The Garnish
1 tbsp finely chopped spring onion greens

  1. Heat the oil in a large wok or a broad non-stick pan.
  2. Add the spring onion whites and greens and sauté on a medium flame for a few seconds.
  3. Add the garlic, schezuan sauce and sauté on a medium flame for 30 seconds.
  4. Add the noodles and salt, mix well and cook on a medium flame for 1 to 2 minutes.
  5. Pour the chilli oil on top and cook on a medium flame for 1 minute.
  6. Serve immediately garnished with spring onion greens.

This is such a brilliant recipe, its quick ,easy and taste great....I make this often and my family enjoys it....

In spite of the dominant garlic, the noodles are subtly flavoured. A delicious, easy to prepare a Chinese dish in minutes!Goes well with most sauces! Thank you! :)
