Quick Baby Corn and Paneer Subzi

This scrumptious subzi can be made in a jiffy as it simply involves sautéing vegetables and paneer with a few ready spice powders. Nevertheless, it makes a great accompaniment for any kind of roti. It is also better to prepare the quick baby corn and paneer subzi in a broad pan so that the paneer does not break.

Ingredients

3/4 cup thinly sliced and blanched baby corn
3/4 cup sliced paneer (cottage cheese) (2”x 1/2”)
2 tbsp oil
1/2 cup thinly sliced onions
1/2 cup thinly sliced capsicum
1/2 cup thinly sliced tomatoes
1 tsp cumin seeds (jeera) powder
1/2 tsp chilli powder
2 tbsp finely chopped coriander (dhania)
1 1/2 tbsp fresh cream
1/2 tsp dry fenugreek (methi) leaves leaves
1 1/2 tbsp tomato ketchup
salt to taste

Method
  1. Heat the oil in a broad non-stick pan, add the onions and sauté on a medium flame for 1 to 2 minutes.
  2. Add the baby corn and capsicum and sauté on a medium flame for 2 more minutes.
  3. Add the tomatoes and sauté on a medium flame for another 1 to 2 minutes.
  4. Add the cumin seeds powder, chilli powder, coriander, fresh cream, dry fenugreek leaves, tomato ketchup and salt, mix well and sauté on a medium flame for 1 to 2 minutes, while stirring occasionally. Mix well.
  5. Add the paneer, mix gently and cook on a medium flame for 2 minutes, while stirring occasionally.
  6. Serve hot.
