  1. To make pumpkin potato sabzi heat the ghee in a deep non-stick kadhai, add the bay leaves, cinnamon, cloves, cardamom, nigella seeds, mustard seeds and fenugreek seeds and sauté on a medium flame for 1 minute.
  2. Add the tomatoes, asafoetida, mix well and cook on a medium flame for 1 minutes, while stirring occasionally.
  3. Add the pumpkin, potatoes, curds, chilli powder, coriander-cumin seeds powder, turmeric powder, salt, ¾ cup of water and mix well.
  4. Cover and cook on a medium flame for 10 minutes or till the vegetables are cooked.
  5. Add the dried mango powder and sugar, mix well and cook on a medium flame for 1 minute, while stirring occasionally.
  6. Serve pumpkin potato sabzi hot.

  17. Add 2 tsp coriander-cumin seeds (dhania-jeera) powder.
  18. Add 1/4 tsp turmeric powder (haldi).
  19. Add salt to taste. We added 1/2 tsp salt.
  20. Add 3/4th cup water.
  21. Mix well.
  22. Cover and cook on a medium flame for 10 minutes or till the vegetables are cooked.

  24. Add 1/2 tsp dried mango powder (amchur).
  25. Add 1/2 tsp sugar.
  26. Mix well.
  27. Cook on a medium flame for 1 minute, while stirring occasionally.

Its very good combination...the only variation that I did is I added pumpkin later when potatoes are more than half cooked as adding them together makes pumpkin like mashed ones.
