Primavera Salad

An unusual dressing of herb flavoured curds and cream is the highlight of this salad.

1 1/2 cups cooked fusilli
4 cups iceberg lettuce , torn into pieces
1/2 cup blanched broccoli florets
1/4 cup dried mushrooms
4 to 6 blanched asparagus , cut into pieces
4 halved cherry tomatoes

To be mixed into a dressing
6 tbsp curds (dahi)
8 tbsp fresh cream
4 tbsp finely chopped spring onion greens
2 tbsp celery, finely chopped
salt to taste

  1. Combine all the ingredients in a large bowl and chill.
  2. Just before seving, add the dressing and toss the salad well.
  3. Serve immediately.

  1. You can use any vegetable combination of your choice eg. baby corn, snow peas, carrots etc.
  2. After you blanch the vegetables, immerse them in cold water so that they retain their original colour.
