The interesting combination of ingredients in the sprouted matki and poha makes it a powerpacked breakfast loaded with iron! the vitamin c in lemon and sprouted matki also enhances the absorption of iron.

Ingredients

1 cup boiled sprouted matki (moath beans)
2 cups beaten rice (poha) (jada poha)
2 tsp oil
1 tsp cumin seeds (jeera)
1 tsp finely chopped green chillies
1/2 cup finely chopped onions
1/2 tsp turmeric powder (haldi)
1/2 tsp sugar
1/4 tsp chilli powder
salt to taste
2 tsp lemon juice
2 tbsp chopped coriander (dhania)
2 tbsp milk

Method
  1. Wash and drain the rice flakes and keep aside.
  2. Heat the oil in a broad non-stick pan and add the cumin seeds.
  3. When the seeds crackle, add the green chillies and sauté on a medium flame for a few seconds.
  4. Add the onions and turmeric powder, mix well and sauté on a medium flame for 1 minute.
  5. Add the matki, beaten rice flakes, sugar, chilli powder, salt, lemon juice and coriander, mix well and cook on a medium flame for 2 to 3 minutes, while stirring occasionally.
  6. Sprinkle the milk evenly over it and mix well.
  7. Serve hot.
