A delicious soup made with aromatic spring onions and soothing potatoes.


The addition of lemon juice along with the regular salt and pepper seasoning enhances the flavour of the potato and spring onion soup. Should you like it spicier, add a dash of tobasco sauce.

Method
  1. Heat the butter in a broad non-stick pan, add the potatoes and spring onions and sauté on a medium flame for 2 minutes.
  2. Add 3 cups of hot water, mix well and cook on a medium flame for 5 minutes, while stirring occasionally.
  3. Switch off the flame, add the lemon juice, salt and pepper and mix well.
  4. Serve hot.

Potato and spring onion soup, really a different soup.. the potatoes gives a perfect thickness to the soup without adding cornflour, the tangy taste from the lemon is just perfect for this soup..
