The potato song is inseparable from the cuisine of goa and neighbouring regions along the western coast of india. This simple yet aesthetic dish blends with the idyllic and scenic environment along the coast!

Ingredients

1 1/2 tbsp coconut oil or any other refined oil
1 1/4 cups finely chopped onions
2 tsp chilli powder
1 1/2 cups chopped potatoes
salt to taste
1/4 cup tamarind (imli) water
2 tbsp finely chopped coriander (dhania) for the garnish

Method
  1. Heat the oil in a kadhai, add the onions and sauté on a medium flame, while stirring continuously till they turn translucent.
  2. Add the chilli powder, mix well and sauté on a slow flame for a few seconds.
  3. Add the potatoes, 1½ cups of water and salt, mix well and cover and cook on a medium flame till they are cooked, stirring once in between.
  4. Add the tamarind water, mix well and simmer for another 5 to 7 minutes. Serve hot garnished with coriander.
