Ingredients



For the stuffing
2 medium sized potatoes, boiled
1/2 cup grated paneer (cottage cheese)
1/2 cup chopped cabbage
2 tbsp chopped coriander (dhania)
4 green chillies, chopped
1/2 cup finely chopped onions
salt to taste

For the dough
1 cup plain flour (maida)
salt to taste
1 tbsp ghee

Other ingredients
ghee for cooking
plain flour (maida) for dusting

Method

    For the stuffing

    1. Peel and mash the potatoes very well.
    2. Add all the remaining ingredients, mix well and keep aside.

    For the dough

    1. Sieve the flour with the salt. Add the ghee and enough water to knead to a soft smooth dough.
    2. Divide into 6 equal portions and keep aside.

    How to proceed

    1. Take one portion of the dough and flatten it a little.
    2. Put 1 tbsp of the potato stuffing in the centre.
    3. Cover the mixture by drawing up the edges towards the centre.
    4. Press on a lightly dusted board and roll out into 200 mm. (4") diameter circle.
    5. Cook on a hot tava (griddle), using a little ghee, until both sides are golden brown.
    6. Repeat with the remaining dough and stuffing to make 5 more rotis.
    7. Serve hot.
