Poha khichu, a simple gujarati snack made of flaked rice cooked with spices. Papad khar is a seasoning that is used in the making of papads and traditionally used in khichu. You will find it at some specialty stores. You can even make the khichu ahead of time and steam it for 4 to 5 minutes just before serving. To make it spicier, you can add finely chopped green chillies.

1 cup beaten rice (poha)
1 tsp cumin seeds (jeera) , roughly crushed
2 pinches of soda bi-carb
1/2 tsp chilli powder
salt to taste
4 tsp oil for serving

For The Garnish
1 tbsp chopped coriander (dhania)

Method
  1. Blend the rice flakes in a mixer to a coarse powder (the texture should be similar to rawa) and keep aside.

  3. Add the powdered poha and mix well, while stirring continuously with a wooden spoon so that no lumps remain.
