Plum and Banana Sorbet

A very refreshing sorbet. Bananas soothe the tangy sharpness of the plums and also add more softness to the texture of this sweet and sour sorbet.

Ingredients


10 ripe plums
2 bananas
sugar as required

For the garnish
a few plum slices
a few banana slices

Method
  1. Peel and deseed the plums.
  2. Peel the bananas and chop them finely.
  3. Add the chopped bananas and sugar as required to the plum pulp and whisk till all the sugar dissolves. Add more sugar if required.
  4. Mix well and pour into a shallow container. Cover and freeze till it is almost set.
  5. Divide the mixture into 2 batches and churn each batch separately in a blender till smooth.
  6. Transfer into a shallow container. Cover and freeze till firm.
  7. Scoop out using an ice-cream scoop and serve immediately, garnished with plum and banana slices.

Tips
  1. Taste the mixture at regular intervals to adjust the amount of sugar.
  2. If you want to sweeten the mixture after it has frozen, add powdered or icing sugar as it melts quicker.
