Ingredients

3/4 cup whole wheat flour (gehun ka atta)
1/2 tsp dry yeast
1/2 tsp sugar
2 tsp olive oil
salt to taste

Method

  1. To make pita bread, combine the dry yeast, sugar and 2 tbsp of water in a bowl and mix well. Cover with a lid and keep aside for 5 minutes or till the dry yeast completely dissolves in the water.
  2. Combine all the ingredients along with the yeast-water mixture in a deep bowl, mix well and knead into a soft dough using enough water.
  3. Cover the dough with a wet muslin cloth and allow it to prove for 30 minutes or till the dough doubles in volume.
  4. Knead the dough to remove the excess air.
  5. Divide the dough into 3 equal portions and roll out each portion into an oblong of 175 mm. (7”) length and 6 mm. (¼”) thickness using a little whole wheat flour for rolling.
  6. Heat a non-stick tava (griddle) and cook the pita bread on a medium flame for 1 minute on both the sides or till small blisters are seen.
  7. Then, cook it on an open flame till it puffs up and brown spots appear on both the sides.
  8. Cut each pita bread into 2 halves horizontally and use as required.

Making Pita Bread Dough

  1. After half an hour, the dough doubles in volume. Deflate the dough and knead the dough again to remove the excess air.
  2. Divide the dough into 3 equal portions.
  3. Roll out each portion into an oblong of 175 mm. (7”) length and 6 mm. (¼”) thickness using a little whole wheat flour for rolling.

Making Whole Wheat Pita Bread

  1. To prepare the pita bread | Indian style pita bread | healthy whole wheat pita bread | pita bread on tava | heat a non-stick tava (griddle) and place the rolled pita bread over it. Alternatively, you can even bake the pita bread in an oven.
  2. Cook the Whole Wheat Pita Bread on a medium flame for 1 minute on one side.
  3. Flip it and cook on the other side till small blisters are seen.
  4. Then, cook it on an open flame till it puffs up and brown spots appear on both sides.

Aloha, I was wondering how to proceed if you are working with an electric stove. I have a cast iron Skillet that I always use for making Naan bread and tortillas, but there is no open flame for the second part where it seems the bread puffs up. Do you have any suggestions? Mahalo.

Tarla Dalal    You can try by rolling it thin and initially cook it on your skillet. Sideways also keep another hot plate ready at high temperature and puff it on that hot plate. It should puff slightly. However this might be slightly dry and you will need to serve it immediately. Also since it is thin, do not over stuff the pita bread while adding the stuffing.

Your ingredients don''''t include water!! Wouldn''''t you agree it''''s important when dealing with dough?! All you say is 2 tbsp water in your directions, but who knows whether it applies to the proportions in the ingredients section, plus this makes the automated quantities calculator pointless.

Tarla Dalal    Dear Mam : Thanks for your response but we always mention water in the method. The usage of the water is mentioned in the step. Note that for the dough, we use the term enough water as the quality of the flour differs from each brand.

OMG!!! I am so glad that i finally got the perfect, quick, easy and also a healthy recipe to make my very own pita breads at home... i am so satisfied with the accuracy of the recipe as they have turned out so nice & light... the pockets are perfect.. well guess its time for me to look up for your falafel and garlic sauce recipe... try this recipe to believe it..
