Use Digestive or Marie biscuits for low calorie desserts, however use them in moderation. Just make sure you select a ripe and sweet pineapple, as it not only helps to mask the sour taste of curds but also calls for less sugar substitute.

Ingredients


2 cups chopped pineapple
2 tbsp low fat curds (dahi)
2 tbsp low fat cream
8 tsp low fat paneer (cottage cheese)
4 tsp sugar substitute
2 drops lemon juice

For the biscuit base
1/2 cup crushed digestive or marie biscuits
1 tbsp low fat butter

For the garnish
2 tsp crushed digestive or marie biscuits

Method

    For the biscuit base

    1. Combine the crushed biscuits with the butter in a bowl and mix well to form a crumbly mixture.
    2. Press the biscuit mixture at the bottom of the serving bowl so that it forms a base layer. Put it to set in the fridge for 5 to 7 minutes.

    How to proceed

    1. Combine the pineapple with 1 tbsp of sugar substitute in a pan and mix well.
    2. Cook it on flame for 5 minutes till soft. Remove and keep aside.
    3. Combine the curds, cream, paneer, sugar substitute and lemon juice and blend in a mixer till it form a thick sauce.
    4. Spread the pineapple over the set base and top with the prepared sauce.
    5. Serve chilled garnished with crushed biscuits.
