Pina Colada Doughnuts

Delightful doughnuts filled with pineapple, coconut and sultanas.

Ingredients



For the dough
1 1/2 cups plain flour (maida)
2 tsp (10 grams) fresh yeast , crumbled
3 tbsp sugar
2 tbsp fresh cream (optional)
1 tsp oil
a pinch of salt

To be mixed into a filling
1 slice pineapple, chopped
2 tbsp grated coconut
2 tbsp sultanas
2 tbsp brown sugar
1/4 tsp cinnamon (dalchini) powder

Other ingredients
oil for deep-frying

Method

    For the dough

    1. Combine all the ingredients except the oil in a bowl and knead into a soft dough using enough water until it is smooth and elastic.
    2. Add the oil and knead again.
    3. Cover with a damp muslin cloth and allow it to prove till it is double in volume (approx. 15 to 20 minutes).
    4. Press the dough lightly with your palms to remove the air.
    5. Roll out the dough into a 5 mm. thick sheet.
    6. Using a 75 mm. (3") cookie cutter, cut out 10 circles.

    How to proceed

    1. Place a spoonful of the filling mixture on each of the 5 dough circles.
    2. Place the other 5 dough circles on top of the filling mixture and seal the edges tightly.
    3. Deep fry these doughnuts in hot oil over a medium flame till golden brown on both sides.
    4. Serve hot.
