Ingredients


2 cups baby potatoes
1/4 tsp black salt (sanchal)
2 tsp melted low fat butter
1 1/2 tsp cornflour
salt to taste

For the green chutney
1 cup chopped mint leaves (phudina)
1/2 cup chopped coriander (dhania)
1/2 large onion, sliced
1 tbsp lemon juice
1/4 tsp sugar
2 to 4 green chillies, chopped
salt to taste

To serve
1/4 cup sliced onions
4 lemon wedges

Method

    For the green chutney

    1. Combine all the ingredients and grind to a smooth paste in a blender using very little water.
    2. Refrigerate and use as required.

    How to proceed

    1. Boil the potatoes in salted water and peel them.
    2. Combine all the ingredients together in a bowl and keep aside for 10 minutes.
    3. Heat the butter in a non-stick pan, add the potato mixture and sauté over a medium flame for 4 to 5 minutes till the corn flour is cooked and coats the potatoes.
    4. Serve hot with sliced onions and lemon wedges.
