Penne and Apple Salad

A simple italian based salad recipe.

1 1/2 cups cooked penne
1 cup capsicum (red , green and yellow) , diced
1 apple , diced
10 basil leaves , chopped

To Be Mixed Into A Dressing
1 tbsp lemon juice
2 tbsp olive oil or
1/2 tsp dried mixed herbs
1/2 tsp grated garlic (lehsun)
salt and to taste

  1. Place the cooked pasta and vegetables in a salad bowl and add the dressing.
  2. Mix well and refrigerate for at least 30 minutes before serving.
  3. Serve chilled.

Handy tips

  1. Add a dash of lemon to the sliced apples to prevent them from getting discoloured.
  2. While serving, you may need to add some additional dressing if the salad seems too dry.
