Ingredients

4 unbaked pie shell
3/4 cup water
1 1/4 cups maple syrup
1/2 tsp salt
1/4 cup cornflour dissolve in 1/4 cup of cold water
2 tbsp margarine
1 tsp vanilla essence
2 cups toasted , unsalted pecan halves

Method
  1. Preheat the oven at 400°C. Poke the pie shell several times with a fork and pre-bake for 3 minutes.
  2. Remove pie shell from the oven and place on a rack.
  3. In a medium saucepan, combine water and maple syrup.
  4. Boil for 5 minutes, then add the salt and dissolved cornstarch, whisking vigorously.
  5. Keep stirring and cook over high flame till the mixture thickens and is clear.
  6. Remove from heat and add the margarine and vanilla, stirring until the margarine is melted.
  7. Pour mixture into the pre-baked pie shell.
  8. Arrange the pecan halves on top and press it gently.
  9. Place the pie the oven and immediately reduce the heat to 200°C
  10. Bake for 25 to 30 minutes.
  11. Remove, cool on a rack for about a hours, then refrigerate until thoroughly cooled.
  12. Serve chilled.
