A spicy sweet peanut dip flavoured with lemon grass and coconut.

Ingredients


2 tbsp peanut butter
1 tbsp brown sugar
1/2 cup coconut milk
rind of 1/2 lemon
1 stalk of lemongrass (hare chai ki patti)
1/2 red chilli, deseeded and finely chopped
1/2 onion, finely chopped
1 clove garlic, chopped
1 tsp oil
salt to taste

Method
  1. Heat the oil in a pan and fry the onion and garlic for 2 minutes.
  2. Stir in the rest of the ingredients with 1/2 cup of water and simmer for 15 minutes.
  3. Cool and remove the lemon grass before serving.

Tips
  1. If peanut butter is not available, you can use 2 tablespoons of peanut powder mixed in 1 tablespoon of oil.
