A spicy sweet peanut dip flavoured with lemon grass and coconut.
- Heat the oil in a pan and fry the onion and garlic for 2 minutes.
- Stir in the rest of the ingredients with 1/2 cup of water and simmer for 15 minutes.
- Cool and remove the lemon grass before serving.
- If peanut butter is not available, you can use 2 tablespoons of peanut powder mixed in 1 tablespoon of oil.
