Ingredients


1 cup peanut butter (creamy or chunky)
1 cup sugar
1 large egg
1 tsp baking soda

Method

  1. Preheat oven to 350 degrees & grease baking sheets.
  2. In a bowl with an electric mixer beat together peanut butter&sugar until combined well.
  3. In a small bowl lightly beat egg& beat into peanut butter mixture with baking soda until combined well.
  4. Roll level teaspoons of dough into balls & arrange about 1-inch apart on baking sheets.
  5. Bake cookies in batches in middle of oven until puffed & pale golden,about 10 min.
  6. Cool cookies on baking sheets for 2 min & transfer to racks to cool completely.
