Pasta is children’s favourite food – this version pepped up with tomato based sauce when served with toasted bread makes a delicious lunch treat.

Ingredients


For The Sauce
1 tbsp butter
1 tsp finely chopped garlic (lehsun)
1 1/2 cups tomato pulp , refer handy tip
1/4 cup chopped spring onions
1 tsp chilli powder
2 tbsp tomato puree
salt to taste
4 tbsp cream

Other Ingredients
3 cups boiled pasta (of your choice)

For The Topping
4 tbsp grated processed cheese
1 tbsp finely chopped spring onion greens

Method
For the sauce
  1. Heat the butter in a broad pan, add the garlic and spring onions and sauté on a medium flame for a minute.
  2. Add the tomato pulp, chilli powder, tomato purée, salt and ½ cup of water and cook on a medium flame till the sauce thickens.

How to proceed
  1. Add the cream and pasta , mix well and toss gently.
  2. Top with cheese and spring onions.

Handy tip:
  1. 4 to 5 medium tomatoes when blanched in water, peeled, deseeded and chopped will give approx. 1½ cups of tomato pulp.

How to pack
  1. Cool slightly and pack in a tiffin box.
