Ingredients


For The Paneer Filling
1 1/2 tbsp oil
1 tsp finely chopped green chillies
1/2 cup finely chopped onions
1 cup paneer , cut into 12 mm. ( 1/2“) cubes
1/2 cup cooked and crushed sweet corn kernels
1/4 tsp dried mango powder (amchur)
1 tbsp chopped coriander (dhania)
salt to taste

For The Spinach Filling
1 tbsp butter
1 tbsp plain flour (maida)
1 cup milk
1 cup blanchedand chopped spinach (palak)
salt and freshly ground black pepper powder to taste

Other Ingredients
24 cream cracker biscuits
1 cup grated mozzrella cheese

Method
For the paneer filling

  1. Heat the oil in a kadhai, add the green chilies and onions and sauté on a medium flame till the onions turn translucent.
  2. Add the paneer and corn, mix well and cook on a medium flame for 2 minutes, stirring twice in between.
  3. Add the dry mango powder, coriander and salt, mix well and cook on a medium flame for another minute. Keep aside.

For the spinach filling

  1. Heat the butter in a broad pan, add the plain flour and cook on a medium flame for few seconds, while stirring continuously.
  2. Add the milk and cook on a medium flame till the sauce thickens, while stirring continuously.
  3. Add the spinach, salt and pepper, mix well and cook on a medium flame for another minute. Keep aside.

How to proceed

  1. Arrange the cream cracker biscuits evenly on a baking tray and put 1 tbsp of the spinach filling on each cracker.
  2. Top with 2 tbsp of the paneer filling and sprinkle ½ tbsp of cheese on it.
  3. Bake in a pre-heated oven at 200°c (400°f) for 4 to 5 minutes or till the cheese melts. Serve hot.
