Most people think the bland nature of paneer makes it suitable only for tangy tomato gravies, but that is a misconception — paneer is so versatile that it goes well with white gravy too. Paneer in quick white gravy is an easy and fast, mildly-flavoured preparation. If made with fresh, soft paneer, it is truly a heavenly experience.

Ingredients

1 1/2 cups fresh paneer (cottage cheese) cubes (1”)
2 tbsp ghee
1 tsp garam masala
1/2 tbsp fresh cream
1/2 tbsp milk
salt to taste

To Be Ground Into A Smooth Paste
1 cup roughly chopped onions
1 tbsp broken cashewnuts (kaju)
6 garlic (lehsun) cloves

Method
  1. Heat the ghee in a kadhai, add the paste and sauté on a medium flame for 1 to 2 minutes.
  2. Add the garam masala, cream, milk, salt and 2 tbsp of water and cook on a medium flame for 2 to 3 minutes, while stirring occasionally.
  3. Add the paneer, mix gently and cook on a medium flame for 1 to 2 minutes, while stirring occasionally.
  4. Serve hot.
