Kofta add zing to palak rice. Try making these soft and tasty kofta with low fat paneer and palak. Not only palak, but low fat paneer is also a health booster as it contains proteins, calcium and vitamin A. Steaming the kofta instead of frying not only slashes down the fat content but also helps to make them soft.

Method

    For the palak rice

    1. Put 2½ cups of water to boil.
    2. Heat a pressure cooker on a medium flame and when hot, add the cumin seeds and dry roast for about 30 seconds.
    3. Add the rice and dry roast while stirring continuously for 2 to 3 minutes.
    4. Add the spinach, salt and hot water and pressure cook for 1 whistle.
    5. Allow the steam to escape before opening the lid. Separate each grain of rice lightly with a fork. Keep aside.

    For the paneer palak koftas

    1. Combine all the ingredients in a bowl and mix well.
    2. Divide the mixture into 12 equal portions. Shape each portion into an even sized round.
    3. Steam the koftas for 7 to 8 minutes in a steamer. Keep aside.

    How to proceed

    1. Pour the palak rice into a serving plate.
    2. Put the paneer palak koftas over the rice and serve hot garnished with coriander.
