Serves 4.


Ingredients


1 1/2 teacups bean sprouts
2 whole dry kashmiri red chillies
3 to 4 cloves of garlic (lehsun)
4 spring onions, chopped with greens
1 tbsp finely chopped celery
2 teacups chinese cabbage or spinach leaves
1/2 teacup cooked baby corn (optional)
1 teacup steamed broccolli or cauliflower
1 tsp soy sauce
4 tsp oil
salt to taste

Method
  1. Heat the oil and fry the red chillies and garlic for 2 minutes.
  2. Add the onions and bean sprouts and celery and cook for 2 minutes.
  3. Add the cabbage, baby corn and broccoli and cook for 2 to 3 minutes.
  4. Add the salt and soya sauce.
  5. Serve hot. Alternatively, serve with steamed rice.

  2. Use any combination of garden-fresh vegetables in this recipe.
  3. Moong beans are very easy to digest as they contain very few chemicals which inhibit protein digesting systems.
