Ingredients


2 1/4 cups boiled mixed vegetables
1 coconut
3 tbsp oil
salt to taste

To be ground into a paste
1 onion
5 tbsp chopped corriander (dhania)
4 green chillies
12 mm. (1/2") piece ginger (adrak)
1/2 tsp lemon juice
4 cloves of garlic (lehsun)

To be ground to a dry powder
3 cloves (laung / lavang)
3 black peppercorns (kalimirch)
3 cardamoms (elaichi)
2 tsp grated nutmeg (jaiphal)

Method
  1. Scrape out the coconut meat, add 3 cups of water and blend in a blender. Strain the coconut milk.
  2. Dry roast the powder.
  3. Heat the oil, add the paste and fry for 3 to 4 minutes.
  4. Add the vegetables, coconut milk and salt and cook for a few minutes.
  5. Add the dry powder and cook for a while.
  6. Serve hot.
