Ingredients



For the mint dressing
1 tbsp mint leaves (phudina)
3 tbsp olive oil
2 tbsp lemon juice
1/2 tsp white pepper powder
1 tsp sugar
1/2 tsp salt

For the salad
1 lettuce, torn into pieces
1 apple, cubed
1 red capsicum, cubed
1 yellow capsicum, cubed
1 orange, segmented

Method

    For the mint dressing

    1. Crush the mint leaves to a paste in a mortar and pestle.
    2. Add the olive oil, lemon juice, white pepper, sugar and salt and mix well till the sugar dissolves.

    How to proceed

    1. Place all the ingredients in a salad bowl.
    2. Just before serving, pour the dressing over and toss the salad.
    3. Put to chilli.
    4. Serve chilled.

    Tips
    1. Store the lettuce in ice-cold water.
    2. When you are ready to serve, drain and wrap the leaves in a muslin cloth to remove the water droplets and then use them.
