This is a nutritious version of pav bhaji, where you can substitue the pav with brown bread also.

Nutritious Pav Bhaji recipe - How to make Nutritious Pav Bhaji

Ingredients

For The Bhaji
2 tsp oil
2 tsp ginger-garlic (adrak-lehsun) paste
a pinch asafoetida (hing)
1/2 cup chopped onions
1/2 cup chopped carrots
1/2 cup chopped capsicum
1/4 cup cauliflower florets
1/4 cup chopped cabbage
1/4 cup chopped tomatoes
1/4 cup corn (makai ke dane) kernels
1 tsp turmeric
salt to taste
1/4 cup chopped spring onion greens
2 tsp pav bhaji masala
1 tsp chaat masala
1 tsp kitchen king masala

Other Ingredients
4 slices brown bread
oil for cooking
Method

For the bhaji

    For the bhaji
  1. Heat the oil in a pressure cooker, add the onions and saute on a medium flame till they turn translucent.
  2. Add the remaining ingredients, except the spring onion greens, pav bhaji masala, chaat masala and kitchen king masala and saute on a medium flames for 3 to 4 minutes.
  3. Cover the cooker and cook for 3 to 4 whistles.
  4. Allow the steam to escape and open the lid and transfer the vegetables in a deep pan.
  5. Blend all the vegetables corsely using a hand blender.
  6. Heat the remaining oil in another deep non-stick pan,tansfer the cooked vegetables and add the spring onion greens, pav bhaji masala, kitchen king masala and chaat masala and cook on a medium flame for 5 to 7 minutes, while stirring twice once in between.

How to proceed

  1. Heat the oil in a non-stick tava and cook the breads till they tuen golden brown in colour from both the sides.
  2. Serve hot with bhaji.

isme aur normal pav bhaji me farak hi kya hai?

Tarla Dalal    This is not a Tarla Dalal recipe. it has been contributed by the member. However, this recipe does not make use of potatoes and has corn instead. Also it is made with less oil and is served with brown bread.
