A medley of colourful veggies with a zesty apple-lemon juice-oregano dressing.

Ingredients


To Be Mixed Into A Dressing and Refrigerated
1 medium sized apple ,
grated with the skin
1 tbsp olive oil
1 tbsp lemon juice
1 tbsp sugar
1/2 tsp dried oregano
1 tbsp firmly chopped raisins (kismis)
salt to taste

Other Ingredients
1/2 cup shredded red cabbage
1/4 cup deseeded and chopped tomatoes
1/2 cup thinly sliced carrots
1/2 cup thinly sliced cucumber
1/4 cup thinly sliced red capsicum
1/4 cup thinly sliced yellow capsicum
1/4 cup thinly sliced green capsicum

Method
  1. Combine all the ingredients together in a bowl and refrigerate till use.
  2. Just before serving, pour the dressing over it and toss well.
  3. Serve immediately.
