The kurkuri bhindi recipe offers a novel and tasty twist to a typical bhindi (lady finger) masala or fry recipe. 250 gms ladies finger (bhindi)
40 ml lemon juice
1 tsp salt
1 tsp garam masala
1 tsp chilli powder
1 tsp chaat masala
50 gms besan (bengal gram flour)
25 gms cornflour
oil for deep frying

  1. Slit the ladies finger into half and cut in thick juliences.
  2. Sprinkle lemon juice, salt, red chilli, chat masala, garam masala and mix well.
  3. Add the besan just enough to coat the ladies finger and keep aside.
  4. Heat oil in a pan, add the ladies finger and deep fry till they turn crisp.
  5. Serve hot garnished with tomato, ginger and green chilli julienne and coriander.
