Noodles and Vegetables in Curry Sauce

A Thai variation of the popular Burmese Khowsuey, here the noodles and vegetables are combined with a fiery Thai curry sauce.

Ingredients



For the curry sauce
1 cup coconut milk
1 tbsp red chilli paste
1 tsp tamarind (imli) pulp
1 tbsp sugar
1 tbsp roasted and crushed peanuts
1/2 cup finely chopped onions
salt to taste

Other ingredients
2 1/2 cups Boiled Noodles
1/2 cup bean sprouts
½ cup long beans (chawli), cut into 25 mm. (1") pieces and blanched
3/4 cup blanched broccoli florets

Method

    For the curry sauce

    1. Combine all the remaining ingredients in a small pan and simmer till the mixture thickens a little. Keep aside.

    How to proceed

    1. Place the noodles on a serving plate and arrange the bean spouts, long beans and broccoli over it.
    2. Pour the curry sauce over the vegetables and serve immediately.
