Excellent for serving with drinks such as fresh lime drink.
- Thoroughly wash the dal. in a large bowl mix together the milk and the water. add dal and leave it to soak overnight. next morning drain the dal and spread it out and a clean. dry cloth to dry off completely.
- Heat the oil to smoking point in a deep fat or karhai. sprinkle a handful of the dal into the hot oil and stand well back as it will splutter slightly. fry for 2-3 minutes, then scoop it out with a perforated spoon. (do not over fry them or they will become hard and brittle.) place them on absorbent kitchen paper to drain off any excess oil and all
