Mushroom and tomato snack, a treat for all mushroom lovers! slices of bread topped with a succulent mushroom stir-fry with onions and tomatoes, and spiced up with paprika. . . What more can one ask for! oregano imparts an italian touch to this snack, which has been sautéed in a non-stick pan to cut down on the oil used for cooking. Besides, serving it with brown bread helps retain the fibre and other valuable nutrients.

Ingredients

2 tsp oil
1/4 cup sliced onions
1/2 cup sliced tomatoes
2 cups sliced fresh mushrooms (khumbh)
1/2 tsp dry red chilli flakes (paprika)
1/4 tsp dried oregano
salt to taste
4 whole wheat bread slices , toasted

Method
  1. Heat the oil in a deep non-stick pan, add the onions and sauté on a medium flame till the onions turn translucent.
  2. Add the tomatoes and sauté on a medium flame for 2 minutes.
  3. Add the mushrooms, chilli flakes, oregano and salt and cook on a medium flame for another 2 minutes.
  4. Divide the mixture into 8 equal portions and keep aside.
  5. Cut each toasted bread slice diagonally into two and spread a portion of the prepared mixture on each piece. Serve immediately.
