Mushroom soup perfect for all those mushroom lovers out there. Blendarising mushrooms with milk makes the soup thick and creamy and makes you forget that the soup actually does not have cream!

Makes 4 servings


Ingredients

2 tsp low-fat butter
1/4 cup chopped onions
2 cups chopped mushrooms (khumbh)
salt and freshly ground black pepper powder to taste
1/4 cup low-fat milk
(99.7% fat-free , readily available in the market)

Method
  1. Heat the butter in a deep non-stick pan, add the onions and mushrooms and sauté on a medium flame for a minute.
  2. Add 3 cups of hot water, mix well and simmer till the mushrooms get cooked. Keep aside to cool.
  3. Blend in a mixer till smooth and transfer to the same pan.
  4. Add the salt, pepper and milk, mix well and bring to boil. Serve hot.
