Tomatoes, cheese and herbs are a time-tested combination. In this Mushroom Open Toast, you will find that mushrooms fit beautifully into the picture too.

Their unique texture makes them an apt addition to this open sandwich, which is further enhanced with tongue-tickling chilli garlic sauce.

For The Topping
3 cups sliced mushrooms (khumbh)
2 tsp olive oil
1/4 cup deseeded tomato cubes
1 tbsp chili garlic sauce
salt to taste
1/4 cup grated processed cheese
1/2 tsp dried oregano

Other Ingredients
4 toasted whole wheat bread slices

For the topping

  1. Heat the oil in a broad non-stick pan, add the mushrooms and tomatoes and sauté on a medium flame for 4 to 5 minutes.
  2. Add the chilli garlic sauce and salt, mix well and cook on a medium flame for 1 to 2 minutes, while stirring occasionally.
  3. Add the cheese and oregano, mix well and cook on a medium flame for 1 minute.
  4. Divide the stuffing into 4 equal portions and keep aside.

How to proceed

  1. Place a toasted bread slice on a clean, dry surface, put 1 portion of the topping over it and spread it evenly.
  2. Repeat step 1 to make 3 more toasts.
  3. Serve immediately.

I am a huge fan of mushrooms.. The cheese and oregano are the main flavour enhancers in this toast..I would also add a little garlic in the oil to get the extra flavour..

Chilled mushrooms and tomatoes sauteed in olive oil taste great. Healthy evening snack and easy to carry to work.
