I am sure this new version of pav bhaji using moong sprouts is sure to win a good share of fans just like the original! relish the bhaji with chapati to morph a regular meal into a healthy fare.

  1. Heat the butter in a kadhai, add the onion paste and sauté till it turns light brown in colour.
  2. Add the tomatoes, chilli powder, pav bhaji masala and salt and simmer for 5 to 7 minutes, stirring once in between.
  3. Add the potatoes, mixed vegetables, moong sprouts and 1 cup water and simmer for another 8 to 10 minutes, while stirring continuously.
  4. Garnish with coriander, onions and butter and serve with laddi pav.

Handy tip :

  1. To get ½ cup of boiled onion paste, combine 2 cups of chopped onions with ¾ cup of water and boil till the onions turn translucent. Cool and blend in amixer to a fine paste.
