A Sponge cake glazed with a generous helping of coffee, cocoa and brandy, topped with whipped cream and almond flakes.

Ingredients



For the sponge cake
1 recipe of Eggless Sponge Cake
1 tbsp coffee powder

For the glaze
100 gms granulated sugar
1 tbsp strong black coffee
1 tbsp cocoa powder
2 tbsp brandy

For the decoration
1 1/2 cups whipped cream
a few almond (badam) flakes

Method
  1. For the sponge cake
  2. Proceed as mentioned in the recipe, adding the coffee powder to the batter.

For the glaze

  1. Put the sugar, black coffee, cocoa powder and 4 tablespoons of water in a saucepan and stir until the solids are dissolved.
  2. Bring to the boil on a low flame and simmer for 5 minutes.
  3. Remove from the heat and add the brandy.

How to proceed

  1. Prick the cake all over with a fork
  2. Pour the glaze over the cake and leave to soak.
  3. Decorate with the whipped cream and almonds flakes.
