Mixed vegetable bhaji is a combination of 3 vegetables, which is delicious and easy to prepare.

Ingredients

1 small cauliflower , cut into florets
4 oz french beans , clean and cut into halves
2 potatoes , cut into quaters
4 tbsp ghee
1 onion , chopped
2 pods garlic (lehsun) , crushed
of ginger (adrak) , cut into julliennes
1 tsp cumin seeds (jeera)
2 tbsp curry paste
14 oz canned tomatoes
salt to taste

For The Garnish
2 tbsp chopped coriander (dhania)

Method
  1. Combine the water and little salt in a pan and bring to boil, add the cauliflower florets, beans and potatoes and futher boil for 8 minutes and half cook the vegetables. Drain and keep aside.
  2. Heat the ghee in a pan, add the onions, garlic, ginger and cumin seeds and saute for 3 minutes on a medium flame.
  3. Add the curry paste, tomatoes, salt and 2/3 cups of water and bring to a boil.
  4. Add the partially cooked vegetables.
  5. Cover and cook for 5-8 minutes or until the vegetables are tender.
  6. Serve hot garnished with coriander.
